Chicken Stir Fry over Brown Rice. This recipe could not be more simple;
Chicken breasts, cooked and cubed
Yellow and Red Peppers diced
Onions, diced
Carrots, sliced
Celery, slicedThe ingredients can be of your choosing. Just be sure to use a whole grain rice that is not overly processed. White rice is the last choice for this healthy meal. Brown rice, quinoa, or even couscous would work. You could cook the quinoa or couscous in chicken broth or homemade chicken bone broth for more added health benefits.
